stuffed strawberries

This is an easy-peasy recipe.
It does take a little time - but really worth the time!

Chris doesn't like chocolate - so this totally appealed to him.
The recipe is floating around on Facebook.
We decided to give it a whirl and take for dessert to mom's at lunch yesterday.
I couldn't find it again on Facebook, so I just Googled it.


1.  Wash strawberries and pat dry.
2.  Cut tops and bottoms off (so they stand).
3.  From the top of the strawberries, "dig" or cut out a little hole. (you may eat the bottoms and what you "dig" out)  =)
4.  In a bowl, mix the following until smooth: 8 oz. softened cream cheese, 1/2 cup of powdered sugar, and 1 tsp of vanilla.
5.  Spoon mixture into a Zip-loc bag and cut a bottom corner off.
6.  From the bag, squeeze mixture into the "holes" in the strawberries.
7.  Stand in container.
8.  For a finishing touch, sprinkle graham cracker crumbs on top.  (or you may melt chocolate chips and drizzle over top)

new recipes

I thought I'd share a few recipes that I have made over the past few months.
I found all of these on Pinterest ... they are tried, tested, and APPROVED!

Crock Pot Italian Chicken
 THIS IS DELICIOUS AND SO EASY! - especially for pasta and crock pot lovers.  Four chicken breasts, one packet Zesty Italian dressing seasoning, one 8 oz. cream cheese (softened), two cans cream of chicken soup.   Cook on low for 4 hours. If sauce is too thick, add a little milk. Serve over pasta.   Great for Sunday lunch!

Calzones
Roll pizza dough (refrigerated kind, packet kind, or homemade) into a rectangle the length of your baking sheet. It can be wider than the sheet because you will be folding the sides in. Place the dough on the baking sheet and let the sides hang off.  Put sauce on the center half of the dough.

Just like pizza, add your toppings (our favorites are pepperoni, beef, onions, bell peppers). Calzones can be a good way to use up leftovers. Any small amounts of meat, cheese and vegetables can be put into the calzone.  Then add cheese.
Cut the dough on the sides at about 3/4 inch intervals. Don't cut all the way to the filling.
Then wrap.
 Start at the bottom and alternating sides, overlap the strips of dough onto the filling in a lattice pattern. You can stretch the pieces to fit all the way over the filling.

Slow Cooker Creamy Chicken and Wild Rice Soup
4 1/2 cups chicken broth
2 cups water
2 boneless, skinless chicken breasts
1 package of Rice-a-Roni long grain and wild rice 
1/2 tsp salt 
1/2 tsp pepper
1/2 cup all purpose flour
1/2 cup butter
2 cups half and half 
1 cup grated carrots 
1 cup diced celery

Directions:  Combine broth, water, carrots, celery, chicken and rice (along with seasoning packet) in a large slow cooker. Cook on low for 6 hours or on high for 4 hours. Take out chicken and shred with two forks and then add back into slow cooker. In a small bowl combine salt, pepper, and flour. In medium saucepan over medium heat, melt butter. Stir in flour mixture by tablespoon to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Stir cream mixture into slow cooker and then let cook on low for 15 more minutes. 

Pulled Pork Sandwiches

pork butt (whatever size needed for your family)
1 can Diet Pepsi
1/2 bottle Sweet Baby Ray's Barbecue Sauce
Lawry's Seasoning Salt
 
Generally coat pork butt with Lawry's seasoning salt.  Place in crock pot and pour in soda and barbecue sauce. Cover and cook on low for 4-5 hours. If you have a larger piece of meat, it will probably take longer. After 4 hours or so, take two forks and shred the meat into bite size chunks. Let it sit in the juice to soak up all that flavor. It can stay on warm in crock pot while serving, and can easily be reheated the next day. Serve on a bun or roll and add more barbecue sauce if needed.

a bunch of randomness

My thoughts for today:
  • For dinner last night, I cooked spicy chicken sandwiches with pepper jack cheese (a mix of Chick-Fil-A's sandwich's breading and Wendy's sandwich's flavor). Chris thoroughly enjoyed. And I made no-bake peanut butter oatmeal cookies for him. So, can I go shopping Saturday, babe?
  • I'm loving this gorgeous, beautiful, perfect weather. And the spectacular blooming of flowers ... irises, thrift, camelia bush, and azaleas have budded! Love it!
  • I did not drink caffeine at all on Wednesday. I survived without it 3/4 of the day on Thursday ... then caved and drank approximately six ounces. Don't ask about Friday so far?
  • Chris and I love to play "Words With Friends" on our phones -- I won two games yesterday! :)
  • I walked with a friend yesterday afternoon. Exercising feels great - but, why is it so hard to muster up the motivation to do it regularly? (I have two excuses ... (1) I do not like exercising indoors. (2) I have a phobia of exercising alone in public.)
  • Yesterday, it was proposed to add a few duties and 5 additional work hours a week to my job. I accepted. [Duh] I (heart) my job!
  • God answers prayer!! This was the 'theme' of the service at church on Wednesday. And Thursday ... I heard of not one, not two, not three, but of FOUR prayers being answered for me/friends/family! {see previous bullet} Praise the Lord!
  • I disassembled and cleaned our front porch light yesterday. Thousands of bugs had met their death inside the globe. And the light shone brighter last night. Note: I'm spring cleaning a little at a time -- I may be finished by September.
  • I've lost/misplaced/hidden a set of keys. And I need to find them [like yesterday].
  • You know you're aging when .... the eye doctor mentions 'cataracts' during your check-up. Yep, at my appointment this week, when my eyes were dilated, the doc said he saw pheripheral cataracts. I said, "I'm only 29!!!" He said, "It's okay, we'll worry about them 30 years from now."
  • Thank goodness, it's Friday!! ((insert much rejoicing)) Yes, I do love my job. But, I enjoy sleeping in and all the extra activities of the weekend. Oh, and duties of laundry and yard work are beckoning.

it's a biscuit!

My mama bakes the tastiest, lightest, fluffiest biscuits.
They are great with jelly.
They are great with sausage.
They are great with gravy.
They are great eaten all by themselves.
I've watched her 'whip' up a pan of biscuits many times.
It is one of my life-long dreams to bake biscuits like hers.
Not long after Chris and I married, I attempted my first biscuits.
Sorry, there's no picture,
but my ratio of shortening to flour/milk was too high.
The 'biscuits' were hard as a rock.
No kidding - Chris threw one into the yard and it didn't break.
Our dog didn't even eat it.
It was that bad.
I was so embarrassed.
It was literally YEARS before I attempted again.
The 2nd time I followed a recipe. Still no good.
I'd rather have a can of biscuits from the refrigerated section.
Or a bag from the frozen section.
But, recently, my cousin, Bradley, has taken up cooking.
And he has cooked biscuits from Southern Biscuit Flour.
I thought, if Bradley can do it ... I can do it.
So, I promptly purchased a bag of Southern Biscuit Flour.
And this past Monday, since we were snowed in,
I attempted biscuits. Again.
Much better. Slightly tasty. And Chris devoured 3 or 4.
And Thumpy even liked these.But, they still don't taste like Mama's.

sharing a recipe

Tuesday night, I tried a new dessert recipe, Peach Crisp.
I found it in Pioneer Woman's cookbook.
I love fruit cobblers, crunches, and crisps.
And this recipe is absolutely delicious.
The maple cream sauce makes it.
It it is so incredibly scrumptious - I have to share it.

as requested

recipe for
ham quiche
ingredients:
1 (9 inch) deep dish pastry shell
1/2 cup of milk
4 eggs, beaten
1 cup shredded cheddar cheese (sharp is best)
1/2 cup of mayonnaise
2 TBSP all-purpose flour
1 cup cooked ham, diced (I used canned)
1 cup shredded swiss cheese

bake pastry shell at 400 degrees for 3 minutes.
remove from oven and prick with fork.
return to oven and bake 5 minutes longer.
remove and cool on wire rack.
combine mayonnaise, flour, eggs, and milk.
mix thoroughly.
stir in ham and cheeses.
pour into quiche shell.
bake at 350 degrees for 45 to 50 minutes.

ta-da. you've got ham quiche! enjoy.
